Absolutely.  At Raw Generation we encourage adding more simple, plant based options into your daily meals.  If you're looking for a healthy pasta alternatives, zucchini noodle recipes are a great way to go. All you need to transform your zucchini into noodles (zoodles) is a vegetable spiralizer. 


Low carb pasta recipes can be tough to find because most pastas are made from refined grains.  When you make these zoodle recipes, you will be using zucchini to make your pasta noodles!  Top the zoodles with any of these 3 healthy pasta sauce recipes, and you will have a delicious and easy low carb meal.


How to Make Zoodles:

Ingredients:

  • 1 - 2 large zucchini 

 

You’ll need:

  • A vegetable spiralizer 

 

Directions

Cut off the ends of your zucchini and twist through the spiralizer until the entire zucchini has been turned into zoodles. It's as easy as that!


Healthy Pasta Sauce Recipe #1: Raw Marinara

Ingredients:

  • 4 large tomatoes 
  • 1 cup chopped sundried tomatoes 
  • 1 garlic clove
  • 1 Tbsp. extra virgin olive oil 
  • Small bunch fresh basil 
  • Himalayan salt & black pepper to taste 

Directions

Pulse in your blender/food processor until your desired consistency.


Healthy Pasta Sauce Recipe #2: Raw Pesto

Ingredients:

  • 1/2 cup pine nuts
  • 1 Tbsp. extra virgin olive oil 
  • Small bunch fresh basil 
  • Handful fresh parsley 
  • 1 clove garlic 
  • 1 Tbsp. water
  • 1 Tbsp. hemp seeds
  • 1 tsp. lemon juice
  • Himalayan salt & black pepper to taste 

Directions

Pulse in your blender/food processor until your desired consistency


Healthy Pasta Sauce Recipe #3: Cashew Alfredo 

Ingredients:

  • 1 cup raw cashews
  • 1 ½ cups water
  • 1 clove garlic
  • 1 tsp. lemon juice
  • Himalayan salt & black pepper to taste 
  • Optional: ½ tablespoon nutritional yeast (for a "cheesier" flavor. Skip this if you're on a juice cleanse.)

Directions

Blend until smooth and creamy.
